Happy 11 year Anniversary to Al and I & Green Eggs and Ham
Today is Alan and my 11 year wedding anniversary! It seems like just yesterday I wore my poofy tulle dress and married my Alan on that beautiful June afternoon in 1997! To begin "our day" I tried this FABULOUS recipe for breakfast from my Cuisine at Home magazine. Carlos, my adventurous eater, wasn't too keen on them but was intrigued that they were called Green, eggs, and ham. I think he was disappointed the eggs weren't green. He gobbled down all of his blueberries though...
Here is the recipe:
GREEN, EGGS & HAM
4 tablespoons unsalted butter, divided
2 sandwich sized ciabatta squares(I bought a whole loaf and just cut 2 sandwich sized squares off of the loaf) halved horizontally
Salt and pepper to taste
8 slices of Canadian bacon (again I deviated and bought pancetta-lots more flavor I think)
1 tablespoon olive oil
1/2 lb. asparagus, trimmed
2 oz. soft goat cheese
1 teaspoon fresh lemon juice
1/2 teaspoon lemon zest, minced
8 eggs
1/4 cup half and half
Fresh thyme leaves (which I proudly snipped from my herb garden!)
Preheat oven to 400 degrees.
Melt 2 tablespoons butter, brush onto cut sides of ciabatta, and season with salt and pepper. Toast in the oven on a baking sheet, cut side up, until golden, about 10 minutes.
Saute Canadian bacon (in my case, pancetta) in oil in a nonstick skillet over medium heat until edges curl, 1-2 minutes (3-4 minutes for thick slices). Remove from pan and set aside; wipe out pan (I used two paper towels). Bring 1/2 cup water to a boil in the skillet over high heat. Add asparagus and simmer until water evaporates, 3-5 minutes; remove and set aside.
Combine goat cheese, lemon juice, and zest in a small bowl; spread onto cut sides of toasted ciabatta.
Whisk eggs, half and half, salt and pepper together in a bowl.
Melt remaining butter in the skillet over medium heat, add egg mixture, and scramble, stirring constantly, until nearly set. Divide eggs among ciabatta and top each with 2 slices bacon, asparagus, and thyme. Transfer to oven and bake just until eggs are set, 5 minutes. Remove and slice in half diagonally.
Because we are celebrating, we enjoyed a mimosa with this and it went together very nicely, but of course mimosas are such treat.
