Mmmmm....chicken burgers, that's right, chicken burgers!
A few years back my mother-in-law, Yvonne, gave me a subscription to a magazine called Cuisine at Home. I have a jack pot of smokin' recipes from this publication! Almost every issue holds a wonderful recipe. I recently posted Green, Eggs and Ham and last week I received my latest issue and within a few days made a few new things I love. Sunday I made Chicken Burgers and Al LOVED them...a true test as he doesn't hesitate to say what isn't all that great. No courtesy MMMMMMM....it's DELICIOUS. If there is a hint of a pause when I ask, so, do you like it? What do you think? I know he isn't a fan. I didn't even have to ask on this one. He genuinely liked it and it was super easy. Easy enough for a weeknight meal foh sho! I do have to say, that I truly LOVE his honesty...if he doesn't care for something, he always says why and I try to make it better. An honest answer is better than not I think!
So without further adieu...
Juicy Chicken Burgers
1 lb boneless skinless chicken breast, diced (I thawed about 3 almost all the way in the microwave and cut then while they are still a little frozen, they cut easier)
1/2 cup Braeburn apple shredded
1/2 cup onion, minced ( I did the apple and the onion in the Cuinart using the shred disc)
Salt and Pepper
Preheat grill to medium-high. Pulse chicken, apples and onions in food processor until coursely ground. Shape into 4 patties, season with salt and pepper, then lightly coat both sides of patties with nonstick spray. Grill burgers 4 minutes per side.
Serve burgers on toasted baguette (I used hamburger buns) with lettuce, tomato and sauce. (See below)
Spicy Special Sauce
2 tablespoons 2% cottage cheese
2 tablespoons reduced fat mayonnaise
2 tablespoons yellow mustard
2 tablespoons pickle relish
2 teaspoons ketchup
1 teaspoon chile sauce
2 tablespoons chopped fresh parsley
Salt and pepper to taste
Puree all ingredients except parsley and seasonings in a mini food processor until smooth. Transfer to a small bowl. Stir in parsley, salt and pepper.
They are so good and don't have really any apple or onion taste. Although, next time I might add a bit MORE apple because I would like it.

Sounds like something I'm going to have to try - I'm always looking for something different to do with chicken! The sauce sounds interesting, too! I'm intrigued!
