Baked Mediterranean Tilapia

Good Morning! I wanted to post a new recipe I tried last night. I found it on the back of the package of frozen tilapia filets. It really turned out delicious and was really light. It is a bit early for any funny chit chat-my head feels a little fuzzy still, so I will get right to it!
Baked Mediterranean Tilapia
4 Tilapia Loins (who knew fish had "loins"?) I used 3 since there is just 3 of us
1 large or 2 medium Vidalia onions sliced 1/4" thick-if unavailable use yellow onions, and the food processor slices them perfectly!
2 medium tomatoes, sliced 1/4" thick (I used the Romas I had on hand from the garden)
4 tbls fresh chopped basil
8 cloves chopped garlic
4 tbls olive oil
12 Kalamata Olives, chopped (I didn't have any so these were omitted, but was delicious nonetheless)
1. Defrost tilapia loins (I am having a hard time not laughing...fish loins...who knew) Preheat oven to 375 degrees.
2. Peel and slice onions 1/4" thick and saute' in olive oil in an ovenproof saute pan over medium heat, 2-3 minutes each side or until onions are translucent.
3. Place loins (ahem) over onion slices. Sprinkle olives, garlic and basil over fish. Place tomato slices on top. Salt and pepper to taste.
4. Place pan in center of oven, uncovered for 12-15 minutes, or until fish is opaque.
I made a pasta with butter, parmesan and chopped tomatoes on the side. A nice salad would go great too.
