My great big boy and Jamie's Spaghetti Carbonara




I really am loving this spring weather, more than usual this year and I am not really sure why. I always felt like more of an autumn girl, but lots of fun things happen April thru August, so I really don't understand myself sometimes. ;) We have Mother's and Father's Day, our wedding anniversary, camping, a plethera of birthdays, most notably Carlos' 7th birthday in July already. Can you even stand the most handsome boy ever in the pictures above? The first picture is Carlos on his way to school this morning. He wanted to be polished like a new penny to go to school today. Be still my heart! The second is Carlos at his first birthday party. That just couldn't have been that long ago, right?
We began baseball practice last week and he is learning so much and is having a great time so far! The juggling has really begun for us with both baseball and karate along with being outside at home and remembering we still have a house to run, too (i.e. the every day cooking cleaning laundry that make our daily worlds go 'round). It is definitely lots of fun watching Carlos learn how to play baseball and all of the karate forms. It is a wonderful outlet for him being the active little guy that he is!! I am glad, mostly, that he seems to enjoy the busy days we have been having. We have worked in down time too, which can escape us if we don't make the conscious effort.

I made Jamie's Spaghetti Carbonara on Sunday for my mom and Rich as they passed through town on their way home to Bayfield from Texas. They detoured through Las Vegas and came home through Colorado. They said they scenery through Colorado was wonderful. It is definitely a road trip we need to make some time!
We all really enjoyed the dish, Jamie! Thank you very very much! This was a very easy dish to put together, truly! Jamie scanned the recipe and sent it to me, I believe you can click on the picture and print it. If you have trouble with it, please let me know and I will email you the file. One thing is I noticed Jamie used only 1 clove of garlic, I used 2...so use what you think you would like-everyone has a different palate. One other note, you can brown the bacon or pancetta in advance, this makes it easier to pull the dish together last minute or when you are having guests as it takes very little effort after the pasta is cooked. Jamie and I both did this when serving this to guests, both of who arrived from out of town. Toss a nice green salad while the pasta is cooking and boom...dinner!
