Perfect Days
I am having the loveliest of days. Carlos left for school happy (not unusual) I opened windows, folded some laundry, made muffins and took a long luxurious shower. I decided to put on a black cotton dress and informalized it with sparkly flip flops and my jean jacket. I put on a little bit of make up and put on the shades and put the top down! I decided to go to my favorite grocery store in St. Paul on Grand Avenue. Can grocery shopping be considered a hobby? It should. :) On my way I called Al and made a lunch date so I picked him up and we went to his (our) favorite Thai restaurant, Supatra and we each ordered something new-I love ordering things I have not tried, while I love favorite dishes, I love trying new things even more. I had Coconut Noodles and it was extra amazing. I loved it, it was spicy, but not too much and very coconutty. During lunch Al and I made a garden list and formulated a plan for the garden planting we are going to do this weekend. All written down on a restaurant napkin. It was wonderful. It makes me feel so happy that he still makes butterflies in my stomach and makes me giddy with joy and that I know I will always feel like the luckiest girl in the world. I wish everyone that kind of giddyness in their own lives. After lunch I proceeded to my favorite grocery and meandered thru picking out the things I needed (lost my list in the process, but oh well), plus a few things I didn't. After loading the trunk I stopped at Dunns Brothers for a true macchiato. Why do they always ask if I want a "real" macchiato? Isn't that what I just ordered? Hmmm...I got it to go in a cute petite cup and began to make my way down Snelling on my way home. I love the winding road with its huge trees. I just couldn't believe my luck today. Every thing feels good and peaceful. Perhaps it is the anticipation of a weekend at home, no running errands really, no activities (as fun as they are) and good solid quality time with the above pictured loves of my life. Al and I are meeting friends for dinner and bowling tomorrow night-bonus! Back to my journey home... As I slowed to a little bit of grid lock on 494 I saw a personalized license plate from Wisconsin that said JKBWR 24. Simone, isn't that a hoot!? Immortalized on a license plate.
I hope this finds all of you amidst your own perfect days. After all, I think is all in the mind.

I love Thai food but have never heard of coconut noodles.....our restaurants here don't seem to have those. When you have a minute, do you think you could recommend me a recipe for them please.
