Tonight I made crab cakes for the first time. My plan was to make them on Friday night but Carlos had requested steak (his first choice was pizza, but Al veto'd that idea) and I thought crab cakes would be good along side but the more I thought about it the more I realized it should be its own meal. Mind you, I didn't think long about it, meaning I didn't spend the afternoon going back and forth creating a lather. I had the Food Network on Friday morning and Emeril was on. I don't regularly watch Emeril, but I was cleaning and his show came on and he was making crab cakes. I immediately found the recipe he was making and realized that I had most of the ingredients on hand (quite a feat!). I made them tonight with the tomato jam Emeril made to top his cakes. I had also planned on making the corn recipe also, but we ended up making corn on the cob with our steaks and I "wasn't in the mood" to go to the grocery store today. We were busy playing backyard baseball and finishing up our painting project (painting the shed to match our newly sided house). I served the cakes topped with the tomato jam along side a pile of spinach with chopped red pepper and olive oil and balsamic vinegar. The recipe made 7 cakes for us. Two for Al, two for Carlos and one for me. Well I may have nibbled on part of a second when I cleared the table. They were delish! I should add, that I did add an egg to "keep it all together". The first cake I tried to form fell apart when I dredged it in panko. I just added one beaten egg to the crab mixture. Problem solved. Did I mention how good they were? The above mentioned cat, Hutch, was VERY interested in them, although he awoke from his nap too late to sneak onto the counter and partake. I have attached a link to the recipe(s).
